Through a unique partnership between Palace Resorts and Rainforest Seafoods, guests can choose live lobster from a saltwater tank and cook it to their liking by the hotel’s skilled chefs.

Offered at an additional cost, using resort credit, the island’s only live lobster dining experience at a hotel is made possible by Rainforest Seafoods‘ brand – Fresh by Rainforest.

“The reservoir is very attractive,” says Ben Jardim, business development manager at Rainforest Seafoods. “It allows customers to select the lobster they like.” While guests are intrigued by the huge filtered tank in the center of the dining room, they appreciate the fresh and tasty lobsters even more.

Moon Palace Jamaica Executive Chef José Vallejo is thrilled to have the opportunity to work with this exclusive menu item. “Our customers are looking for a different kind of seafood. Executive Sous Chef Emilio Benavides has been at Moon Palace Jamaica since it opened just over two years ago, and believes that live lobsters will provide “that wow factor” to diners.

Live lobster will be served in a variety of delicious ways for the guests. “We serve the whole lobster to the guest … We don’t just give them the tail. There is also meat inside the head and the body. We can cook it traditional jerk, Jamaican style with Jamaican spices – chili, Scotch bonnet, green onion. We make a marinade on the grill; so, it could be a jerk lobster, or a traditional garlic butter. We pocket it and grill it a bit. Or we do a thermidor, if they want. Or maybe au gratin; if they want it like that, we can do that option too, ”he explains.

In an effort to offer its guests a world-class epicurean experience at each of their properties, the brand announced earlier this year an exclusive partnership with Certified Angus Beef, making it the first and only hotel chain to offer. the highest quality beef has all 10 of its properties.
