Tofu is one of the best sources of vegan protein because it contains all nine amino acids, making it a complete protein. It also absorbs flavor very well thanks to its porous texture that marinates beautifully.

The one thing to remember about preparing tofu is that it has a high water content, and if that excess water is removed, your tofu will benefit by being crispier. We pressed the tofu between tea towels, but you can also use a tofu press or two plates, being careful not to break the tofu.
