Just as beer is used to flavor batter, we used ginger beer in this delicious vegan vegetable tempura recipe. The ratio of half sparkling water and half ginger beer gives the tempura a unique and delicious flavor while remaining light and crispy.

The vegetable options that can be used in our vegan tempura breakfast recipe are endless, and it’s worth experimenting with new ones each time you make the batter. Ideally, you want appetizer-sized pieces, so not too small.

We used bell peppers, snap peas, asparagus, broccoli, eggplant and zucchini, but depending on the season you can also try cauliflower and carrot.

Serve these mouth-watering bites with a drizzle of syrup and a sprinkle of paprika.
