So your New Year’s resolution is to eat less meat, or maybe go meatless in 2022? You’re not alone. Many people around the world, including those in Charlotte, are choosing to ditch all animal-based food products and follow a vegan diet. But going vegan doesn’t mean giving up your favorite savory dishes for all-vegetarian meals.
Meat substitutes are everywhere – and they go beyond tofu. Seitan, a protein-rich food made from gluten, has been used as a vegan alternative to meat for centuries in China and Japan. Herbal alternatives include jackfruit, a tropical tree fruit grown in Asia, Africa, and South America. It contains fiber and protein and some say it tastes like pulled pork when cooked.
Restaurants in the Charlotte area use these ingredients daily to cater to plant-based diets. Whether you’ve been a lifelong vegan or are going on a diet for the new year, here are six dishes to try in Charlotte:

Dish to try: Lion’s Mane Pot Pie, made with vegetables including broccolini, corn, peppers, potatoes and the titular lion’s mane mushroom, which tastes like meat when cooked, in a homemade pie crust.

Dish to try: Buddha Bowl (pictured above), made with a pickled vegetable of the day, carrots, red cabbage, avocado, tomatoes, cucumber, fried oyster mushrooms, togarashi rice, onions greens, gojuchang aioli, dashi ponzu and black sesame seeds.

Cuisine: Vegan American
Dish to try: Do you miss the taste of creamy pasta? Try this vegan take on the classic Penne Alfredo, made with cashew alfredo sauce, capers, garlic, crushed red peppers, spinach, a choice of vegan chicken or chicken prawns and topped with parmesan cheese vegan and basil.

Dish to try: Chana masala, which is chickpeas cooked in a blend of North Indian spices.
Type of cuisine: Vegan burgers
Food to try: Veggie burgers are the perfect way to indulge. Try the Where Art Thou Romeo burger, a vegan twist on a classic, served with lettuce, tomatoes, grilled onions, cheese and homemade pickles. Or make a duplicate.
Neighbourhood: Piper Glen
Type of cuisine: French
Dish to try: Sweet potato, gnocchi and spinach gnocchi topped with a cashew, mushroom and thyme sauce with crispy tofu and a drizzle of chili oil.
